Irish Cream Rice Pudding

Just four ingredients, no added sugar and you've got a delicious creamy rice pudding.

1 cup milk
1 cup Minute® White Rice, uncooked
1 cup Irish Cream Liqueur
1 egg yolk


  • Bring milk to a simmer in a small non-stick pan. Stir in rice. Remove from heat, cover and let stand 5 minutes, or until most of milk is absorbed.
  • Meanwhile, whisk liqueur and egg yolk together. When rice is ready, return to medium heat and stir in liqueur mixture. Simmer, stirring frequently, 5 minutes. Pudding will thicken as it cools.
  • Best served warm or at room temperature. Refrigerate any leftovers in a sealed container. Reheat in microwave 1 to 2 minutes.
  • Irish Cream Rice PuddingFor a non-alcoholic version substitute 1 cup of Irish cream flavored coffee creamer for the Irish Cream liqueur.
