Shrimp and Pineapple Lettuce Cups

Perfect for a light lunch or supper --- crisp and fresh lettuce filled with shrimp, rice, fresh carrots and shredded cucumber, all drizzled with the perfect dressing made with plum sauce, soy sauce, sriracha hot sauce.  Sweet, spicy and delicious !

Makes 4 to 6 Servings


1 cup Minute® White Rice, uncooked
1/2 cup plum sauce
2 Tbsps reduced sodium soy sauce
1 tsp sriracha hot chili sauce
1 lb large shrimp, cooked, cleaned
1 can (20 oz.) pineapple chunks, drained and chopped
1 cup shredded carrots
1 cup shredded cucumber
1/4 cup chopped fresh cilantro leaves
12 bibb lettuce cups


  • Prepare rice according to package directions.
  • Combine plum sauce, soy sauce and sriracha in medium bowl; reserve.
  • Combine cooked rice, shrimp , pineapple, carrots, cucumber and cilantro in large bowl. Toss with sauce mixture as desired. Divide evenly in lettuce cups; serve with any remaining sauce
