Pumpkin Rice Pudding

Makes 6 Servings


1 cup Minute® White Rice or Minute® Brown Rice, uncooked
1 box (1 oz.) instant sugar-free butterscotch pudding mix
1 can (15 oz.) Libby's® Solid Pack Pumpkin
1/2 tsp pumpkin pie spice
1 container (8 oz.) non-dairy sugar-free whipped topping
1/2 cup chopped nuts (optional)
ground cinnamon (optional)


  • Prepare rice according to package directions. Cool.
  • In a large bowl combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping. Top with nuts and ground cinnamon, if desired.
  • For a creamier, lighter pudding, use 16oz whipped topping.  Also, substitute regular pudding mix and regular whipped topping for the sugar-free versions.
