1 bag Minute® Rice and Quinoa, uncooked
1 can (8 oz.) pineapple tidbits, reserve juice
1 cup whole berry cranberry sauce
1/2 cup celery, sliced
1/2 cup pecan pieces, toasted
lettuce leaves (optional)


Prepare Rice and Quinoa using reserved pineapple juice and enough water to measure 1 cup. Cool.In a medium bowl combine pineapple, cranberry sauce, celery and pecans. Fold in Rice and Quinoa. Chill, if desired and serve on lettuce leaves.If desired, garnish with one-half cup flaked coconut
