Creamy Cornucopia Casserole

2 cups Minute® White Rice or Minute® Brown Rice, uncooked
1 can (14.5 oz.) vegetable broth
1 Tbsp butter
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can (16 oz.) white hominy, rinsed and drained
1 can (16 oz.) cream style corn
1 can (10 3/4 oz.) condensed cream of onion soup


  • Preheat oven to 375°F. Prepare rice according to package directions, substituting broth for water.
  • In a large skillet melt butter and sauté peppers until crisp-tender. Stir in rice, hominy, corn and soup.
  • Spread mixture into a 2-quart round casserole dish. Bake 20 minutes.
