Butternut Squash Soup

Makes 6 Servings


1 Tbsp vegetable oil
1 lb boneless skinless chicken breast, cut into bite-size pieces
1/4 tsp poultry seasoning
salt and ground black pepper, to taste (optional)
1 cup Minute® Brown Rice
1 can (14.5 ozs.) vegetable broth
1 pkg (32 oz.) butternut squash soup


  • Heat oil in a medium saucepan over medium heat. Add chicken and poultry seasoning. Cook 5 minutes.
  • Add vegetable broth and bring to a boil. Stir in rice. Reduce heat and simmer 5 minutes. Add soup and simmer 5 more minutes.
  • For a quick shortcut, substitute 2 cups cooked chopped turkey for the chicken and poultry seasoning.
