Country Breakfast Casserole

A complete breakfast recipe idea:  white or whole-grain brown rice with your favorite crumbled breakfast sausage, add in just the right touch of pizza cheese blend, top with red bell peppers and eggs.  Bake about 20 minutes, and you're done!

Makes 6 Servings


2 cups Minute® White Rice or Minute® Brown Rice, uncooked
8 oz bulk breakfast sausage
1 1/2 cups shredded pizza blend cheese, divided
1 can (8 oz.) tomato sauce
1 red bell pepper, seeded and sliced into rings
6 eggs
salt and ground black pepper, to taste
crushed red pepper flakes (optional)


  • Preheat oven to 425°F. Prepare rice according to package directions.
  • In a large skillet brown sausage and drain, if necessary. Stir in cooked rice, 1 cup cheese and tomato sauce. Spread mixture into a 2-quart casserole dish. With a serving spoon, make six indentations into the mixture, spaced equally apart. Place a bell pepper ring around each indentation and gently press in place. Crack an egg into each ring and season with salt and pepper. Sprinkle with remaining cheese.
  • Bake 20 minutes or until eggs have just set. Serve topped with crushed red pepper flakes, if desired.
