Vegetarian Chili

1 bag Minute® Rice and Quinoa, uncooked
1 can (15 oz.) chili with beans
1 can (14 1/2 oz.) diced tomatoes with Mexican spices
1 Tbsp dry chili seasoning mix


Prepare Rice and Quinoa according to package directions. If desired, for more flavor, substitute vegetable broth for water when preparing rice. In a large microwave-safe dish combine beans (undrained) and diced tomatoes and seasoning (undrained). Microwave on HIGH 3 minutes. Stir in rice. Top with shredded cheddar cheese.
