Fajita Dinner


Makes 3 to 4 Servings

Ingredients

1 bag Minute® Rice and Quinoa, uncooked
8 oz cooked beef or chicken fajita meat
1 cup salsa
1/4 cup fresh cilantro leaves, chopped

Directions

Prepare Rice and Quinoa according to package directions.  If desired, for extra flavor, substitute beef or chicken broth for water when preparing the rice.   In a large microwave-safe dish combine fajita meat and salsa. Microwave on HIGH 2 minutes. Fold in rice and cilantro. Serve with sour cream, shredded cheese and tortilla chips
