Rice and Quinoa Crunch Salad

The nutty texture of Minute® Rice and Quinoa with fresh, colorful red bell pepper, carrots and celery and chicken make this salad satisfying.

1 bag Minute® Rice and Quinoa, uncooked
1 cup vegetable broth
1 cup cooked chicken breast, diced
1/3 cup celery, sliced
1/3 cup carrot, sliced
1/3 cup red bell pepper, seeded and sliced
1/3 cup citrus vinaigrette
lettuce leaves


Prepare Rice and Quinoa according to package directions, substituting broth for water. Cool. In a medium bowl, combine chicken, celery, carrots, bell pepper and vinaigrette. Mix well. Fold in Rice and Quinoa. Serve on lettuce leaves.
