Fiesta Rice Salad

Makes 6 to 8 Servings


2 cups Minute® Brown Rice, uncooked
1 can (15 1/2 oz.) seasoned black beans, rinsed and drained
1 red bell pepper, chopped
1 green bell pepper, chopped
2 each celery, chopped
4 green onions, chopped
1 cup fresh cilantro leaves, chopped
3/4 cup salsa
1/3 cup Italian salad dressing
juice of 1 lime
1 tsp ground cumin powder


  • Prepare rice according to package directions. Cool.
  • In a large bowl combine rice, beans, bell peppers, celery, green onion and cilantro. In a small bowl combine salsa, dressing, lime juice and cumin. Pour over rice mixture.
  • Serve room temperature or chilled.
