Pineapple Basil Chicken

Quick recipe idea:  start with Minute Ready to Serve Jasmine rice, shredded cooked chicken, sweet crushed pineapple, crisp red bell pepper, and just a touch of chopped fresh basil.

Makes 1 Serving


1 cup Minute® Ready to Serve Jasmine Rice
1/4 cup cooked shredded chicken
2 Tbsps crushed pineapple, drained
1/4 cup red bell pepper, cut into strips
1 Tbsp fresh basil leaves, chopped
1 Tbsp soy sauce
red pepper flakes, optional


Heat rice according to package directions.In a small microwave-safe bowl combine chicken, pineapple and bell pepper. Microwave 1 minute. Stir in rice, basil and soy sauce. Top with pepper flakes, if desired.
