Chicken and Rice Tostada

Easy to make Mexican-style lunchtime recipe --- Minute rice simmered with taco seasoning, chopped chicken, just a touch of refried beans, topped with fresh tomato and a touch of sour cream on a crunchy tostada shell.

Makes 1 Serving


1 cup Minute® White Rice
2 Tbsps taco seasoning mix
1 can (16 oz.) refried beans
2 cups cooked diced chicken breast
8 tostada shells
1 fresh tomato, chopped
1 cup sour cream
1 cup salsa


  • Prepare rice according to package directions, adding taco seasoning to the water.
  • Heat beans and chicken in separate microwave-safe bowls. Spread beans on tostada shells. Top with cooked rice, chicken, tomato, sour cream and salsa
