Caribbean Rice and Beans

1 pkg Minute® Ready to Serve Black Beans and Rice
2 Tbsps orange juice
1 tsp lime juice
1 Tbsp red onion, chopped
1/4 cup mango, chopped
1/4 cup red bell pepper, chopped
1 Tbsp fresh cilantro leaves, chopped


  • Prepare beans and rice according to package directions.
  • In a small bowl combine orange and lime juice. Add rice and beans, onion, mango and bell pepper.
