Multigrain Cranberry Pecan Muffins

Quick breakfast idea ... Delicious whole grain muffins with sweet-tart dried cranberries, pecan and just a touch of sweet agave. 

Makes 6 (2 muffins each) Servings


non-stick cooking spray
1 pkg (7.4 oz.) honey bran muffin mix
1/2 cup dried cranberries
1/2 cup chopped pecans
1 cup Minute® Ready to Serve Rice and Quinoa
2 Tbsps agave nectar
1 cup vanilla soy milk


Preheat oven to 425 degrees. Coat muffin tin with non-stick cooking spray.In a large bowl, add muffin mix, dried cranberries, pecan pieces, and rice mix. Stir in agave and soy milk, mixing well. Spoon mixture into prepared tin.Bake for 15 minutes, or lightly browned.If desired, use raisins instead of dried cranberries.
