Coconut Sticky Rice with Chicken

1 cup Minute® White Rice
1/2 cup coconut milk
1 tsp lime zest
1 tsp lime juice
1 cup cooked diced chicken breast
2 Tbsps sweet chili sauce
2 Tbsps dry roasted peanuts, chopped


  • Prepare rice according to package directions.
  • In a medium bowl, combine coconut milk, lime zest and juice, chicken and sweet chili sauce. Warm in microwave until heated through.
  • Serve chicken mixture over warm cooked rice and top with peanuts.
• Garnish with fresh basil and a lime slice
