Chicken Rice Waldorf Salad

Minute Whole Grain Brown Rice, crisp red apple, tangy lemon juice, chicken, celery, and sweet green grapes.  Fast, easy and good for you too ... a delicious side-dish alternative recipe.

1 1/2 cups Minute® Brown Rice, uncooked
1 cup light mayonnaise
1 red apple, diced
1 Tbsp lemon juice
2 cups cooked chicken, diced
1 cup celery, chopped
1 cup seedless green grapes


  • Prepare rice according to package directions. Mix in mayonnaise to cooked rice.
  • In a small bowl, mix apple with lemon juice. Stir into rice mixture with remaining ingredients.
  • Chill and serve.
