Coffee and Cream Rice Pudding

2 cups Minute® White Rice
3 cups milk
2/3 cup sugar
1 tsp vanilla extract
1 Tbsp instant coffee powder


  • Prepare rice according to package directions.
  • Combine cooked rice, milk and sugar in a medium saucepan. Bring to a boil, lower heat and simmer, stirring occasionally, until most of milk is absorbed and the pudding is creamy, about 20 minutes. Stir in vanilla extract.
  • Divide pudding in half and transfer to two medium-sized bowls. Stir instant coffee powder into one of the puddings.
  • Layer vanilla and coffee rice puddings into serving dishes. Serve warm or chilled.
