Calypso Rice and Beans

A delicious side-dish recipe as seen in the February 27, 2011 newspaper.

1 cup Minute® White Rice, uncooked
1/2 cup canned black beans, drained and rinsed
1/2 cup fresh pico de gallo OR salsa, drained
1/2 cup Monterrey Jack cheese, shredded
salt and ground black pepper, optional


  • PREPARE rice according to package directions.
  • In a medium bowl, combine hot cooked rice, black beans, pico de gallo and cheese.
  • Add salt and pepper, if desired.  Blend well.
