Salsa Rice and Black Beans

This recipe appeared in the Incredibly Easy Minute Rice Recipes cookbook in 2009.

1 1/4 cups water
1 1/2 cups Minute® Brown Rice, uncooked
1 can (16 oz.) black beans, rinsed and drained
1 tomato, chopped
1 can (4 oz.) chopped green chilies, undrained
1 Tbsp fresh cilantro leaves or parsley, chopped
1 Tbsp lime juice
1/8 tsp hot pepper sauce
light sour cream (optional)
lime slices (optional)
fresh cilantro leaves or parsley (optional)


  • BRING water to a boil in a large saucepan over medium-high heat. Stir in rice, beans, tomato and chiles. Return to a boil. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat.
  • STIR in cilantro, lime juice and pepper sauce; cover. Let stand 5 minutes or until liquid is absorbed. Stir. Garnish as desired.
