Salsa Rice and Black Beans

(16 oz.) black beans, rinsed and drained

tomato, chopped

(4 oz.) chopped green chilies, undrained

fresh cilantro leaves or parsley, chopped

lime juice

hot pepper sauce
light sour cream (optional)
lime slices (optional)
fresh cilantro leaves or parsley (optional)
Directions
BRING water to a boil in a large saucepan over medium-high heat. Stir in rice, beans, tomato and chiles. Return to a boil. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat.
STIR in cilantro, lime juice and pepper sauce; cover. Let stand 5 minutes or until liquid is absorbed. Stir. Garnish as desired.
