Festive Cocktail Meatballs

This recipe appeared in the Incredibly Easy Minute Rice Recipes cookbook in 2009.

Makes 50 to 60 meatballs Servings

2 lbs lean ground beef
1/2 cup Minute® White Rice, uncooked
1 can (8 oz.) crushed pineapple in juice, undrained
1/2 cup carrot, finely grated
1/3 cup onion, chopped
1 egg, lightly beaten
1 tsp ground ginger
1 bottle (8 oz.) prepared French dressing
2 Tbsps soy sauce


  • PREHEAT oven to 400° F.
  • MIX beef, rice, pineapple, carrots, onions, egg and ginger in medium bowl. Shape into 1-inch meatballs. Place on greased baking sheets. Bake 15 minutes or until browned.
  • MIX together French dressing and soy sauce. Serve meatballs with dressing mixture.
