Chinese Chicken Rice Salad

This recipe appeared in the Incredibly Easy Minute Rice Recipes cookbook in 2009.

1 cup Minute® White Rice, uncooked
3/4 cup light mayonnaise
1/4 cup reduced sodium soy sauce
1 Tbsp vegetable oil
2 tsps prepared yellow mustard
2 1/2 cups cooked chicken, chopped
1/2 cup celery, sliced
1/4 cup green onion, sliced
1/4 cup green bell pepper, chopped
1 can (3 oz.) chow mein noodles


  • Prepare rice according to package directions. Cool.
  • Combine mayonnaise, soy sauce, oil and mustard in large bowl; mix well. Add rice, chicken, celery, onions and bell peppers; mix lightly.
  • Top with chow mein noodles before serving.
