Citrus Rice Pudding

2 cups Minute® White Rice, uncooked
1 pkg (3.4 oz.) instant vanilla pudding mix
2 cups 2% milk
6 pkgs crystallized lemon, orange or lime


  • PREPARE rice according to package directions. Cool. In a large bowl, prepare pudding according to package directions using cold milk.
  • STIR in cooled rice and crystallized lemon, orange or lime; blend well and serve.
  • For a Citrus Chiffon Rice Pudding, stir in 1 container (8 ounces) of thawed lite whipped topping and mix to blend.
