Lemon Chicken and Rice

1 lb boneless skinless chicken breast, cut into bite-size pieces
1 Tbsp vegetable oil
8 oz mushrooms, sliced
1 pkg (16 oz.) frozen broccoli florets (about 4 cups)
1 1/2 cups chicken broth
1/2 tsp onion salt
4 pkgs crystallized lemon
2 cups Minute® White Rice or Minute® Brown Rice, uncooked


  • COOK chicken in oil for 5 minutes in a large skillet over medium-high heat; add mushrooms and cook 3 more minutes.
  • ADD broccoli, broth, onion salt and crystallized lemon to chicken and mushrooms; stir to combine. Bring to a boil.
  • ADD rice; mix well. Return to a boil.
  • REDUCE heat to low; simmer 5 minutes. Remove from heat and let stand 5 minutes.
  • For a zesty flavor use 6 packets of crystallized lemon.
