Lemon Chicken and Rice

boneless skinless chicken breast, cut into bite-size pieces

vegetable oil

mushrooms, sliced

(16 oz.) frozen broccoli florets (about 4 cups)

chicken broth
1/2
tsp
onion salt

crystallized lemon

Directions
COOK chicken in oil for 5 minutes in a large skillet over medium-high heat; add mushrooms and cook 3 more minutes.
ADD broccoli, broth, onion salt and crystallized lemon to chicken and mushrooms; stir to combine. Bring to a boil.
ADD rice; mix well. Return to a boil.
REDUCE heat to low; simmer 5 minutes. Remove from heat and let stand 5 minutes.
For a zesty flavor use 6 packets of crystallized lemon.
