Chicken Parmesan

1/4 cup seasoned bread crumbs
2 Tbsps grated Parmesan cheese
4 boneless skinless chicken breasts
1 egg, beaten
2 Tbsps oil
1 can (14 1/2 oz.) stewed tomatoes
1 can (8 oz.) tomato sauce
1/4 tsp fresh oregano leaves
1 1/2 cups Minute® Premium Rice, uncooked
1/2 cup shredded mozzarella cheese


  • MIX bread crumbs and Parmesan cheese. Dip chicken in egg, shaking off excess; coat in crumb mixture.
  • COOK in hot oil in large skillet until browned and cooked through, turning occasionally. Remove from skillet; drain on paper towels.
  • ADD tomatoes, tomato sauce and oregano to skillet. Bring to boil. Stir in rice.
  • TOP with chicken; sprinkle with cheese. Cover; remove from heat. Let stand 5 minutes.
