Easy Italian Sausage and Rice Soup

Makes 6 Servings


1 lb bulk Italian sausage
1 tsp garlic powder
2 cans (14 1/2 oz.) chicken broth
1 can (15 oz.) Italian-style diced tomatoes
1 cup Minute® White Rice
2 cups fresh baby spinach leaves
1/4 cup Parmesan cheese, shredded


  • IN medium nonstick saucepan, brown the sausage with garlic powder; stirring to break into small pieces.
  • ADD chicken broth and tomatoes. Bring to a boil. Remove from heat and stir in rice; cover let stand 5 minutes.
  • ADD spinach and stir until spinach is wilted, about 1 minute.
  • REMOVE from heat and stir in Parmesan cheese.
