Coconut Ginger Rice Pudding

Makes 8 Servings


1 can (14 oz.) coconut milk
1/4 cup water
2 cups Minute® White Rice, uncooked
1/2 cup sugar
1 tsp ginger
1 container (8 oz.) frozen whipped topping
toasted coconut (optional)
toasted sliced almonds, optional


  • In a medium saucepan bring coconut milk and 1/4 cup of water to a boil. Stir in rice. Cover and simmer 5 minutes. Remove from heat and let sit 5 minutes.
  • Stir in sugar, ginger and whipped topping.
  • Serve topped with toasted coconut and almonds, if desired.
