Chili Cheese Rice Bake

Makes 4 to 6 Servings


2 cups Minute® White Rice or Minute® Brown Rice, uncooked
1 cup onion, chopped
2 Tbsps butter
1 cup sour cream
1 can (4 oz.) chopped green chilies
1 cup small curd cottage cheese
1/2 tsp salt
1/4 tsp ground black pepper
1 cup shredded sharp Cheddar cheese
2 Tbsps fresh cilantro leaves or parsley, chopped


  • PREPARE rice according to package directions.
  • Pre-heat oven to 400ºF.
  • In a large skillet, sauté onions in butter until tender. Stir in sour cream, chilies, cottage cheese, salt, pepper and cooked rice. Pour into a 2-quart baking dish.
  • TOP with cheddar cheese and bake 5 minutes or until cheese is melted. Remove from oven and top with parsley or cilantro.
  • Add 2 cups cooked ground beef or cooked diced chicken. Serve with chips or wrapped in flour tortillas.
