Rice and Bean Salad

2 cups Minute® Ready to Serve Brown and Wild Rice
1 can (15 1/2 oz.) black beans, drained and rinsed
1 can (10 oz.) diced tomatoes and green chilies, drained
1/4 cup fresh cilantro leaves, chopped (optional)


Heat rice according to package directions. Combine all ingredients in a medium-sized bowl. Top with cilantro, if desired.
