Black Bean and Mango Rice Salad

Try this easy-to-prepare salad or side dish.  Delicious cooked black beans, corn, whole-grain brown rice, ripe fresh mango, and just the right touch of seasonings mixed with Italian salad dressing.  Cool and serve right up!

Makes 8 (2/3 cup each) Servings


1 pkg Italian salad dressing and recipe mix
1 can (15 oz.) black beans, drained and rinsed
1 pkg (10 oz.) frozen corn, thawed and drained
2 cups cooked Minute® Brown Rice
1 cup ripe mango, chopped
1 cup red bell pepper, chopped
1/4 cup fresh cilantro leaves, chopped
1/4 cup red onion, chopped
1/4 cup lime juice
1/4 tsp ground cumin powder


Mix all ingredients until well blended; cover. Refrigerate at least 2 hours before serving. Substitute kidney beans for the black beans and papayas for the mangoes.
