Black Bean and Rice Soup

Makes 6 (1 cup each) Servings

2 cans (15 oz. each) black beans, undrained, divided
3 cups water
1/2 tsp fresh oregano leaves
1 tsp garlic powder
2 tsps hot pepper sauce
1 1/2 cups Minute® Brown Rice, uncooked


  • PLACE 1-1/2 cans of the beans with liquid in blender container; cover. Blend until smooth. Pour into large saucepan.
  • STIR in remaining beans, water, oregano, garlic powder and hot pepper sauce. Bring to boil.
  • STIR in rice. Reduce heat to low; cover. Simmer 5 minutes. Spoon into individual serving bowls.
