BLT Rice Salad

... the perfect warm weather salad for lunch or maybe a side-dish for supper!!

4 slices bacon, chopped
1 onion, chopped
2 cups water
1 tsp salt
2 cups Minute® White Rice, uncooked
2 cups Romaine lettuce leaves, torn or chopped
1 tomato, chopped
1 cup mayonnaise


  • Cook bacon in large skillet on medium heat until crisp, turning occasionally. Drain bacon, reserving 2 tablespoon of the drippings in skillet. Crumble bacon; set aside.
  • Add onion to drippings in skillet; cook and stir until crisp-tender. Add water and salt; bring to boil. Stir in rice; cover. Remove from heat; let stand 5 minutes. Fluff with fork. Cool to room temperature.
  • Add lettuce, tomato, mayonnaise and reserved bacon; mix lightly.
