Citrus Spinach and Rice Salad

Whole-grain brown rice, fresh baby spinach, crisp red onion and zesty Catalina dressing.  Oh, and don't forget the fresh orange slices.

2 cups Minute® Brown Rice
1 pkg (6 oz.) fresh baby spinach leaves
1 large orange, peeled, sectioned
1/4 cup red onion slices
1 cup Catalina reduced fat dressing


  • Prepare rice as directed on package. Cool.
  • Toss rice, spinach, oranges and onion with dressing.
  • Substitute:  1 can (11 oz.) mandarin orange segments, drained, for fresh orange sections.
