Pesto Rice Salad

... a great Italian side dish idea !!  For a heartier meal, add 6 ounces grilled chicken breast strips to the prepared salad.

2 cups Minute® White Rice, uncooked
1 pkg (7 oz.) basil pesto sauce
1 cup cherry tomatoes, halved
8 oz Mozzarella cheese, cubed
1/3 cup shredded Parmesan cheese
toasted pine nuts (optional)


  • Prepare rice according to package directions; place in large bowl. Let stand 10 minutes.
  • Add pesto sauce; mix well. Gently stir in tomatoes and cheese. Sprinkle with toasted pine nuts, if desired.
  • Serve warm, or cover and refrigerate until ready to serve.
  • To toast pine nuts, spread in single layer in heavy-bottomed skillet. Cook over medium heat 1 to 2 minutes, stirring frequently, until nuts are lightly browned. Remove from skillet immediately. Cool before using.
