Pesto Rice Salad
... a great Italian side dish idea !! For a heartier meal, add 6 ounces grilled chicken breast strips to the prepared salad.

White Rice
, uncooked

(7 oz.) basil pesto sauce
1
cup
cherry tomatoes, halved
8
oz
Mozzarella cheese, cubed
1/3
cup
shredded Parmesan cheese
toasted pine nuts (optional)
Directions
Prepare rice according to package directions; place in large bowl. Let stand 10 minutes.
Add pesto sauce; mix well. Gently stir in tomatoes and cheese. Sprinkle with toasted pine nuts, if desired.
Serve warm, or cover and refrigerate until ready to serve.
To toast pine nuts, spread in single layer in heavy-bottomed skillet. Cook over medium heat 1 to 2 minutes, stirring frequently, until nuts are lightly browned. Remove from skillet immediately. Cool before using.
