Cheesy BBQ Skillet

boneless skinless chicken breast, cut into strips
non-stick cooking spray

White Rice
, uncooked

barbecue sauce

cups
water

cup
canned black beans, drained, rinsed

cups
Cheddar cheese, shredded (divided)
Directions
Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 4 to 5 minutes or until cooked through.
Stir in rice, barbecue sauce and water. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes or until most liquid is absorbed.
Add beans and 1 cup of the cheese; mix lightly. Sprinkle with remaining 1/2 cup cheese; cover. Cook until cheese is melted.
Substitute:
Prepare as directed, substituting 1 lb. ground beef for the chicken.
