Rustic Bacon Rice Salad

Makes 6 Servings


2 cups Minute® White Rice, uncooked
1 pkg (10 oz.) frozen whole kernel corn in butter sauce, thawed
1 pkg (2.1 oz.) ready to serve bacon, cut into 1-inch pieces
1 cup frozen peas, thawed
1/4 cup green onion, sliced
1/3 cup Catalina dressing


  • Prepare rice according to package directions.
  • In a large bowl, add cooked rice, and all remaining ingredients except dressing; mix lightly.
  • Place dressing in a small microwaveable bowl. Microwave on HIGH 30 seconds or until warmed.
  • Add warmed dressing to salad and serve.
