BBQ Chicken and Rice Dinner

This recipe appeared in 1991 print advertisements and has been modified over the years.  A quick and easy-to-prepare dinner time dish.

1 Tbsp oil
4 boneless skinless chicken breasts
2 cups water
1 cup barbecue sauce, divided
1 cup frozen or canned whole kernel corn, drained
2 cups Minute® White Rice, uncooked


  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet; cover to keep warm.
  • Add water, 1/2 cup of the barbecue sauce and corn to skillet. Bring to boil.
  • Stir in rice. Top with chicken; cover. Reduce heat to low; cook 5 minutes. Top chicken with remaining 1/4 cup barbecue sauce.
  • Increase oil to 2 tablespoons if using a regular skillet.
