15 Minute Mediterranean-Style Chicken and Rice

2 cups Minute® White Rice, uncooked
1 Tbsp oil
4 boneless skinless chicken breasts
1 can (14 1/2 oz.) Italian-style diced tomatoes, undrained
1 cup frozen cut green beans
1/4 tsp salt
1/8 tsp pepper


  • PREPARE rice according to package directions.
  • HEAT oil in large skillet on medium-high heat. Add chicken; cook until browned on both sides.
  • ADD tomatoes with their liquid and the green beans. Bring to boil; cover. Reduce heat to medium-low.
  • SIMMER 5 minutes or until chicken is cooked through (170°F) and beans are crisp-tender. Stir in salt and pepper. Serve over cooked rice.
  • This low-calorie low-fat meal provides your family with more than 1/2 cup of the recommended 2-1/2 cups of vegetables per day.
