Asian Broccoli and Red Pepper with Peanuts

Makes 4 Servings


2 cups Minute® Brown Rice, uncooked
1/2 cup vegetable broth, divided
1 cup green onion, sliced
1 Tbsp fresh ginger root, minced
1 Tbsp minced garlic
6 cups broccoli, chopped
2 cups red pepper, chopped
3 Tbsps soy sauce
1 cup dry roasted peanuts, chopped


  • Prepare rice according to package directions.  
  • Heat 1/4 cup of the vegetable broth in large skillet on medium-high heat. Add green onions, ginger and garlic; stir-fry 1 to 2 minutes or until tender.
  • Add broccoli, red pepper, soy sauce and remaining 1/4 cup vegetable broth. Bring to boil; reduce heat to low. Simmer 5 to 6 minutes or until broccoli is tender, stirring occasionally. Stir in peanuts.
  • Serve vegetable mixture over hot cooked rice.
