Dijon Shrimp Scampi

1 lb large shrimp, peeled and deveined
1 each minced garlic
2 Tbsps olive oil
2 Tbsps dijon mustard
2 Tbsps lemon juice
1/4 cup parsley, chopped
2 cups Minute® White Rice or Minute® Brown Rice, uncooked


  • PREPARE rice according to package directions.
  • COOK and stir shrimp and garlic in hot oil in large skillet on medium-high heat until shrimp turn pink.
  • ADD mustard, lemon juice and parsley; mix well. Cook until heated through, stirring occasionally.
  • SERVE over rice.
  • VARIATION: 1 pound boneless skinless chicken breasts, cut into strips, for shrimp
