Dijon Rice Florentine

Just simmer rice in chicken broth and garlic, stir in spinach and mustard ... the perfect side-dish, ready in about 20-minutes!!

Makes 4 Servings


1 can (14 1/2 oz.) chicken broth
1 each minced garlic
1 cup Minute® White Rice, uncooked
1 pkg (10 oz.) frozen chopped spinach, thawed, well drained
2 Tbsps dijon mustard
2 Tbsps grated Parmesan cheese


  • BRING broth and garlic to a boil in medium saucepan over high heat.
  • ADD rice; stir. Reduce heat to low; cover. Cook 10 minutes. Add spinach and mustard; stir. Cook, uncovered, an additional 8 to 10 minutes or until liquid is absorbed and rice is tender.
  • STIR in cheese.
