20 Minute Chicken and Rice Stir Fry

Ingredients

1 Tbsp vegetable oil
2 cups broccoli florets
1 red bell pepper, cut into strips
1 onion, sliced
2 cups water
1/3 cup light soy sauce
2 cups Minute® White Rice, uncooked
2 pkgs (6 oz. each) grilled chicken breast strips
1 red bell pepper, cut into strips
1 onion, white, fresh, sliced

Directions

  • Heat oil in large skillet on medium-high heat. Add broccoli, red bell pepper and onion; cook 5 minutes, stirring occasionally.  
  • Stir in water and soy sauce. Bring to boil.  
  • Add rice and chicken breast strips; mix well. Cover. Reduce heat to low; cook 5 minutes or until rice is tender and chicken mixture is heated through.
