Easy Stuffed Peppers

mushrooms, sliced

pasta sauce

2% milk shredded reduced fat mild Cheddar cheese, divided
4
green bell peppers, tops and seeds removed
Directions
Preheat oven to 400°F. Mix rice, mushrooms, spaghetti sauce and 3/4 cup of the cheese.
Place peppers in 2-quart baking dish. Fill with rice mixture; cover.
Bake 30 to 35 minutes or until peppers are crisp-tender and filling is heated through. Sprinkle with remaining 1/4 cup cheese. Bake an additional 5 minutes or until cheese is melted.
Nutrition Bonus: These low calorie, stuffed peppers make a delicious meatless meal. The green peppers are an excellent source of vitamin C.
