BBQ Chicken with Brown Rice Pilaf

Oven-broiled barbecue chicken with whole grain brown rice simmered in chicken broth with mushrooms and green peas

4 boneless skinless chicken breasts
1 cup barbecue sauce
1 can (10 1/2 oz.) condensed chicken broth
1 cup water
2 cups Minute® Brown Rice, uncooked
1 cup mushrooms, sliced
1 cup frozen peas
1 onion, chopped


  • Heat broiler. Broil chicken, 6 inches from heat, 5 to 6 minutes on each side or until done (165ºF) brushing frequently with barbecue sauce.
  • Meanwhile bring broth and water to boil in large skillet on medium-high heat. Stir in rice and vegetables; cook on low heat 5 minutes or until vegetables are tender. Cover. Remove from heat. Let stand 5 minutes.
  • Jazz It Up: For added color and flavor, sprinkle with chopped cilantro just before serving.
