Quick and Easy Paella

1 Tbsp olive oil
1 cup red bell pepper, chopped
1 cup onion, chopped
4 each minced garlic
3 cups chicken broth
1 tsp ground turmeric, optional
1 lb shrimp, cleaned
3 cups Minute® White Rice, uncooked
1 pkg frozen peas and carrots, thawed


  • Heat oil in large nonstick skillet on medium-high heat. Add bell pepper, onion and garlic. Cook 2 minutes or until vegetables are crisp-tender, stirring frequently.
  • Add chicken broth, turmeric, and shrimp; stir. Bring to boil.
  • Stir in rice and peas and carrots; cover. Reduce heat to low; simmer 5 minutes. Stir before serving.
