Charleston Rice

1 Tbsp oil
2 each garlic, minced
2 each celery, chopped
1 green bell pepper, finely chopped
1 pkg (6 oz.) thin sliced smoked ham, finely chopped
1 can (14 1/2 oz.) stewed tomatoes, undrained
1 cup chicken broth
2 cups Minute® White Rice, uncooked
4 green onions, sliced
1 Tbsp hot pepper sauce (optional)


  • Heat oil in a medium saucepan over medium heat. Add garlic, celery and bell pepper. Sauté 2 minutes.
  • Add ham and sauté one more minute. Stir in tomatoes and broth. Bring to a boil. Stir in rice and green onion.
  • Cover, remove from heat and let stand 5 minutes. Stir in hot pepper sauce, if desired.
