Caribbean Chicken

1 whole chicken (about 3 lb.), cut into 8 pieces
2 Tbsps adobo seasoning
1 cup zesty Italian dressing, divided
6 each minced garlic
1 onion, sliced
1 cup white vinegar or lime juice
1 cup stuffed green olives, chopped
1/4 cup capers
1 bay leaf
4 cups hot cooked Minute® White Rice


  • Rub chicken with adobo seasoning; set aside. Heat 1/4 cup of the dressing in large skillet on medium-high heat. Add chicken; cook 7 to 10 minutes or until lightly browned, turning occasionally. Remove chicken from skillet; cover to keep warm. Drain and wipe out skillet with paper towels.
  • Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 minutes. Reduce heat to medium-low. Return chicken to skillet; simmer, covered, 45 minutes or until chicken is cooked through.
  • Spoon over rice to serve.
  • How to Make Your Own Adobo Seasoning: Mix 1 tablespoon each garlic powder, onion powder, dried oregano leaves and pepper, and 1/2 teaspoon salt. Store in airtight container at room temperature.
