Crimson Rice

Makes 6 Servings


2 cups water
1 pkg Italian salad dressing and recipe mix
2 cups Minute® White Rice or Minute® Premium Rice, uncooked
2 cups cooked fresh beets, chopped
1 cup Parmesan cheese, shredded


  • Mix water and salad dressing mix in medium saucepan. Bring to boil on medium-high heat, stirring occasionally.
  • Add rice and beets; mix lightly. Remove from heat; cover. Let stand 5 minutes or until liquid is absorbed.
  • Stir in cheese.
  • Substitute 1 jar (15 oz.) whole beets, drained and chopped, for the chopped cooked fresh beets.
