Creamy Garlic Chicken

1 1/2 cups Minute® White Rice or Minute® Brown Rice, uncooked
2 tsps oil
4 boneless skinless chicken breasts
1/4 cup whipped salad dressing
2 cups frozen stir fry vegetables
1 Tbsp soy sauce
4 each minced garlic


  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 minutes, turning after 3 minutes.
  • Add sandwich spread, vegetables, soy sauce and garlic; stir. Cook, covered, 7 minutes or until chicken is cooked through, stirring occasionally.
  • Serve over the hot cooked rice.
