Southwestern Rice Salad

A quick, easy and flavorful salad with a Southwestern twist.

2 cups Minute® White Rice or Minute® Brown Rice, uncooked
1 can (15 oz.) black beans, drained and rinsed
1 cup corn
1 red bell pepper, chopped
3 green onions, sliced
1 cup Italian dressing
1 cup salsa
1 cup lightly crushed tortilla chips
chopped fresh cilantro leaves or parsley (optional)


  • PREPARE rice according to package directions. Place in large bowl; cool.
  • ADD beans, corn, bell peppers, onions, dressing and salsa; mix lightly. Cover and refrigerate at least 1 hour or until ready to serve.
  • TOP with crushed chips and garnish with cilantro, if desired, just before serving.
